An account opened today is likelier to be offered 689, because that is where the spare numbers are.
Does 407 still carry anything? Less than people assume. Somebody who has lived here for decades may read 689 as the newer arrival, and a caller from another state cannot tell them apart at all. If the older code matters to you, ask before anything goes to print.

A city that never entirely closes
Hospitality sets the clock here. Kitchens, grounds crews and housekeeping move before dawn. Front desks and attractions are still going when most offices have been dark for hours. The suppliers and trades keeping all of it upright have to be reachable at both ends of that day, because a walk in cooler does not fail politely at ten in the morning.

- Put the time zone in the greeting. If you take bookings from out of state, Eastern time and your hours belong in the opening seconds.
- Make sure the greeting can be changed from a phone. Not only from a desk, by the one person who knows the login.

The metro spreads across several counties and keeps pushing outward, because there is flat buildable ground in every direction and no coastline to stop it. Two customers who both call themselves Orlando businesses can be the better part of an hour apart.
For anyone selling a visit rather than a product, that has one blunt consequence. Whoever can answer a real question is usually in a vehicle, so a system built around a handset on a desk solves a problem this metro does not have.
